
Jhonatan Gasca Wush Wush - Colombia (250g)
This Wush Wush lot is produced using an advanced washed process with multiple controlled fermentation stages. After selective handpicking of fully ripe cherries, the coffee undergoes 12–24 hours of in cherry oxidation, followed by 48–72 hours of anaerobic fermentation in sealed tanks to develop fruit forward aromatics.
After depulping, the parchment is fermented for an additional 24–36 hours to enhance sweetness and complexity. The coffee is then washed with clean mountain water, slowly dried on raised beds for 15–25 days, and rested after drying to ensure flavor stability and balance.
