José Díaz's Pacamara from El Volcán farm in Chalatenango, El Salvador, showcases the dedication of a coffee farmer who returned home to build something lasting. Grown at 1600–1650 metres altitude, this washed-process coffee undergoes 72-hour anaerobic fermentation in sealed tanks, developing complexity and sweetness through controlled microbial activity. The beans are then slowly dried on three-tier raised beds over five weeks, allowing consistent airflow and careful moisture reduction that preserves delicate flavours and farm character.

Expect notes of apricot, dried berries, and clove. Versatile across filter and espresso brewing methods, this coffee reflects both José's agronomic skill and the rich volcanic terroir of El Pinar.
