In the early 1930s, Don Juan Palacios founded the village of Palmira in La Libertad, Huehuetenango, where he established a coffee plantation. His son, Amadeo Palacios, expanded the coffee plantation, and eventually, his grandson Axel Palacios inherited 70 hectares of the estate in 1997. Axel, having known the Morales brothers Alejandro and Fredy since childhood, joined Fredy's Rosma Team project for exporting specialty coffee in 2013. Together, they formed a joint venture known as Los Suspiros, meaning "the sighs." Los Suspiros primarily cultivates Caturra and Bourbon varieties, producing washed, honey, and natural process coffees.
The wet mill station and sun drying for specialty coffees occur in the Huehuetenango valley. The decision on processing - fully washed, honey, or natural - is made by the Rosma Team after careful analysis, cupping, and certification. During certain seasons, they simultaneously conduct fully washed and natural processes. Coffee from Los Suspiros is often described as a new and distinctive coffee with a syrupy flavor profile, clean finish, and notes of ripe mango, red cherry, canned peaches, with a crisp finish and a hint of florals.
