Tasting Notes of Guava, Dried Blueberry & Red Grape
Through her coffee upbringing, Karen has followed in her mother's footsteps and is now the proud owner of her very own farm! Despite difficult weather during this year’s drying season Karen managed to produce a high-quality end cup.
When Karen was young, her mother Natalia became involved in the coffee growing industry to help support her children and ensure they had sufficient tuition.
After establishing a successful farm, growing high-quality microlots (Las Flores) Natalia was made able to put her children through university. Post-degree, both Karen and her brother Edgar decided to continue their path in the coffee industry.
Given their experience and knowledge in numerous positions throughout the coffee industry Karen and her brother decided to establish an exporting company, committed to improving quality and farmer livelihood throughout Honduras.
After picking the cherries they are taken to the local wet mill in Chinacla where they are weighed, screened and manually selected. The ripest cherries are placed on raised beds where they are slowly dried over a period of 3 weeks. Once they reach the optimal moisture content level of 11.5% they are stored until exportation where they are to be milled at the nearby dry mill.
