Quality is imperative at Kinini Washing Station, where the cherries go through a particularly rigorous washed process. They are taken to raised beds and cleaned by hand, before being sent to the floating tank. They are then de-pulped and go through a first wash and dry fermentation for 24 hours, followed by a further 5-20 hours of fermentation in the soaking tanks. They are then brought to the raised beds for controlled drying. Finally, the cherries undergo quality control and are dried in the sun for around 15 days.
You’ll find high acidity, full body and an aroma of vanilla pod in the cup.
