During their visit to Colombia, Nomad visited the Finca San Luis, owned by Mr Omar Arango. Omar has a lot of experience and a great love for nature. 25 years ago he inherited his father’s farm and only 3 years later he started working to make it totally organic. A very difficult job in which the Federation of Coffee Growers of Colombia did not help him at all. He planted tall trees to bring shade and achieve a perfect microclimate for the coffee three to grow healthy without using chemicals.
This particular lot comes from an area of the farm that Omar calls Mateguadua. There he has the oldest typical variety of coffee grown on his farm, which is very tall and gives very little production but high quality. Omar told Nomad that he wants to involute his coffee trees so that they develop flavours that we have never tasted before. This involution is achieved by acclimating and caring for older coffee trees so that they develop their old qualities
The process of this coffee consists of a selection of ripe cherry, with a quality separation of floats before making an anaerobic fermentation of 48 hours in cherry and 24 hours in parchment. After these fermentations, it gently washes them and takes them to dry to high beds under shade for 12 days until the coffee reaches 14% humidity. To take them up to 10.5%, it dries intermittently in a mechanical silo that never exceeds 39ºC for 5 days.
